For my sausage making I keep it simple and limit myself to just a few sausage recipes and continually try to make them better. They are Italian for pizza’s, Kielbasa because it’s great in a sub-sandwich, Venison because the meat is almost always available and it’s also really good and last a typical Breakfast Sausage. I do keep an eye out for slight refinements to these recipes or procedures especially the wild game ones.

Will have to check that website out....we've never made our own sausage, but since we'll hopefully have a deer in the freezer and since I also have about twenty pounds of pork fat just waiting to be mixed into something, I think this is the Year of the Sausage!
There's an old saying that you sleep better at night NOT knowing what's in sausage. That's not true because people can make it at home.
You what's really scary? Hot dogs. Nobody makes them at home.

Since you and Paul are such a do it yourself people I'm kind of surprised you haven't made your own sausage yet. But since you have all the stuff you need give it a go. It is esay and home made tastes great. You will get hooked on it...
